We had dinner at the sushi bar at Fugakyu tonight, sitting at the sushi bar in our friend Hiro-san’s section. Hiro, the jovial and extremely talented sushi chef from Hawaii elevates a good sushi place to great. Dining in his section is almost like being in a completely different restaurant. The way to do it properly is to give him free range to work his magic as he builds beautifully artistc creations that highlight whatever fish is freshest that day.



He wields a knife like a Japanese master because he studied sushi making in Japan. What started as a punishment by his uncle for his reckless teenage behavior, his forced exile to the sushi school in Japan turned out to be the thing he was meant to do in life.
